Happy Thursday, ladies!

A Big Steak Salad

I have been craving a big steak salad after watching Pioneer Woman make one on her 16-Minute Meals episode.  I kind of altered a few things, but here is what I came up with.

I started by prepping my onion rings. I sliced them very thin and soaked them in buttermilk. Buttermilk seems gross, but it's the kicker for good onion rings.



After I soaked them for about 30-45 minutes, I made my flour mixture. This you can make however you'd like. My concoction started with a bunch of flour and the following spices:



I didn't measure any of this, just dumped away!

I heated my oil in my little, handy fryer. I love this thing! We use it all of the time...I know, frying is bad. Oh well.



Dredge your onion rings in the flour and toss 'em in the oil. Not sure how long I left them in there, but just wait until they are nice and brown. :)

As for the steaks, well- that's the hub's department. We got a big fat ribeye from the butcher and had him cut it in half so it wasn't so thick. He did his thing on the charcoal grill and they came out perfect.



For my dressing I made a version of homemade ranch:


The packet of Ranch calls for one cup of milk and one cup of mayo. I did 1/2 c. of buttermilk, 1/2 c. 2% milk, and 1 c. of plain yogurt! I like my dressing more on the thin side, so I added a little extra milk. Just a little though.

My actual salad part just consisted of romaine lettuce, cherry tomatoes, & cucumbers. You can go all kinds of crazy here, but I just stuck to a few of the basics.

After you have all of your components, just load it up. My final product looked a little something like this:


...and let me just tell ya,  it was good. Real good. ;)

Monday Mix-Up: Toddler Must-Haves!


Well, it's Monday so that means it is time for:



Heather and I are excited to be talking about Toddler/Baby Must-Haves this week! We hope you will link up and join us!

On to my must-haves for my Lexi Belle. These are just a few! Lexi is almost 3 and it is really getting easier to go places and do things because she is so independent. There are a few things that we use on the daily that I don't think I could live without! These are more along the lines of "girl" things, but some of them could definitely be used for both genders.

1. First 100 Words Book- Lexi is a little bit old for this but she still really enjoys looking at this and picking out all of the animals and other things.

2. Land's End Hooded Towel- These are the BEST. They are thick and big and you can even personalize them. You HAVE to have one (or 5) of these!

3. The IGuy for iPad - This little thing is a lifesaver. We use it for Lexi's iPad mini and it protects the iPad while providing handles for her to hold on to. Somebody was genius when inventing this. Just sayin'.

4. Land's End Tote - These are SO handy. We have them in multiple sizes and use them all of the time. They are great for the beach or every day use. Another bonus- you can personalize them. Winner.

5. Nalgene Toddler Water Bottle - We have tried multiple sippy cups and have found that these are the BEST. Seriously, they don't leak, they are a great size, and you can get them in a bunch of fun colors. I swear by theses babies. 

6. Suave Kids Detangler - We use this almost every day. With a little girl with long, blonde, curly hair, we HAVE to use something to get those tangles out. This works perfect and smells great, too. 

7. Pottery Barn Anywhere Chair - We are on our second one of these! My grandma got Lexi one when she was a baby and she seriously used that thing all of the time. We just graduated up to the next size for Lexi's new big girl room. They come in a ton of fun styles and colors!

Randomness & Thoughts On Shopping

Just some mid-week randomness for ya today. 

My brain has been on overload lately because I'm starting to realize that in the next few months, my to-do list is going to be CRAZY. Let's see, here are just a few things I'm pondering on...

*Decorating Lexi's new room
* Decorating Harli's Nursery
*Decorating their bathroom they will share
*Preparing for Harli (washing clothes, buying bedding, carseat...the list goes on)
* Planning my sister-in-law's baby shower
*wondering how I'm going to clean all of this house
*having a baby

You know, stuff. 

I'm the type of person who wants to do it all NOW! I want to get everything that I need in one day. I want to DIY everything in ONE day. Yeah, not good. I need to slow down, break things out, and concentrate on ONE thing at a time. ADD, I swear. 

So yeah, all of that. 

Then on another note, shopping.

You know, when I was in high school, I liked to wear cute stuff (same in college) but then I seemed to start really being interested in clothes, shoes, bags, everything. I would like to blame that on 3 things: blogs, social media, and the ability to get online and shop my little heart all in the comfort of my own home. Needless to say, I order a lot of crap off of the internet. BAD. 

I have made myself a promise that I will only buy the necessities, and of course, make sure my girls have what they NEED. 

That means that if I see a cute little girl on IG and think, "I want that outfit for Lex/Harli!" I don't immediately search around and order the items. I go look in their closet and come up with something similar if I am THAT in love with it. Same thing goes for myself. I need absolutely nothing. SERIOUSLY. My hubs reminds me of this on the daily...my clothes/shoes/jewelry situation is kind of out of control and there is not one thing in this world I need.

SO-- I'm not shopping unless it's absolutely necessary. 

This is going to be rough. Really rough. But I know I can do it. 

Less is more, right? 

Right.

Monday Mix-Up: Green!

Happy St. Patty's Day!

Today is our second round of Monday Mix-Up! I'm teaming up with Heather over at The Heathered Life for this fun link up! Today we are discussing GREEN, duh!



I wanted to make something fun for Lexi's friends in her Sunday School class, so I found this cute idea and made them! You could do these for school parties (if your school allows for homemade goodies) or anything! The best part--they are SUPER easy! 


First, you will need a box of Lucky Charms, a box of Toasted Rice Cereal (I used Great Value), 1 large bag of white chocolate chips or 2 small, sprinkles, and some treat bags!


The first thing you have to do is separate the marshmallows from the cereal. This took just a little bit, but not that bad!


After you have separated the cereal, you will need to add your rice chex to the lucky charm cereal. I only used about half of the Lucky Charm cereal pieces because I got the large box and I really didn't need that much!


After you have combined the two cereals, put your white chocolate chips in a microwave safe dish and melt away! You could use a double boiler, but who has time for that?!



Next, combine the white chocolate and the cereal mixture. Be careful to stir gently because the cereal will easily crumble.


It's starting to look yummy!!!

Dump in your favorite sprinkles! I only used about 1/3 of this bottle. The fun part is that you can use whatever or however much you would like!


Fold the sprinkles into the mixture then spread it out on a lined cookie sheet.


Once it's all spread out on your cookie sheet, add the marshmallows back on the top!

I let it set about 20 minutes, just until the chocolate slightly hardened.

I then bagged them up in little treat bags that I picked up at Walmart. Nothing fancy.


I printed these little tags here and attached them to the bags!

Easy peasy lemon squeezy!


And there you have it!  A fun treat for your littles to share with their friends!

A Beautiful Spring Day

Yesterday was a BEAUTIFUL day outside and we took full advantage of it. We played outside all afternoon and we grilled out for dinner!! 















She's such a little tom boy. :) 

Too bad they are calling for snow tomorrow... bleh.
